This is something that happened one year ago this month. It was so funny, and such a proud moment for me, that I decided to share it here.
I hope that it will give you some inspiration (and a laugh:) to make some super healthy lunches for your kids (and for you) ! It takes very little time in the morning, and we are setting them up for a successful day at school - AND for a lifetime of healthy habits!
By the way, it is a RARE day that my kids are sick. I honestly can not remember the last time. I know that is not the case with their classmates, who miss school regularly. None of my kids have ever had a cavity - EVER. Additionally, all 3 test positive for lyme, but due to their robust immune systems they breeze through life easily and symptom free, while others frankly are stopped in their tracks with lyme disease.
WE LIVE IN THE MOST OVERFED, UNDERNOURISHED NATION IN THE WORLD!
As a mom, I can tell you that I love my kids to pieces. As a parent, we ALL want the very best for our kids. We do our best to put them in the best schools, expose them to different languages, round out their personalities with music, art and sports. We do absolutely everything we can to give them the world... and yet we, as a nation, are dropping the ball when it comes to feeding our children. American children today are now the sickest generation- ever.
Rules for Success
1st rule of success: EAT FOOD WITHOUT A BAR CODE!
2nd rule of success: SHOP THE 4 CORNERS OF THE STORE!
3rd rule of success: EAT FOOD THAT GOES BAD, BEFORE IT GOES BAD!
Teach your kids everything you know! My kids are the kids at the birthday party that will scrape off the (weird, neon colored) frosting, lean over and whisper to me, "Do you see how much dye is in that frosting mom? I'm sooo not eating that!" No, they did not come out as these little freaks of nature, I've just taught them what I know.... They've never tasted soda. They know what aspartame & MSG are and how to convert grams to teaspoons of sugar when reading a label. Dinner conversation might go something like this: "Mom, did you know that so & so drank 2 cartons of chocolate milk today? That is 11 teaspoons of sugar!"
Do my kids go without? Absolutely NOT! We make the most fun, tasty and delicious snacks around here! However all of the ingredients have been overhauled! We make a quick "ice cream" in 30 seconds flat with almond milk, raw honey (or stevia) and fresh organic fruit in the vitamix. (see recipe below!) AMAZING cookies, tarts and pies are a snap when you switch up the ingredients with flax, hemp, sunflower seeds, dates, figs, cacao and so forth. It is actually a pleasure spending time with them in the kitchen! We're always creating something completely amazing!

I LOVE having healthy kids!
A couple of nights ago, my kids were playing around in the kitchen with the vitamix. This is generally an every day occurrence, but this dessert was particularly tasty! Remember Dreamsicles??? Ok, like this only better!! Thought I'd share:
4 cups ice
1/4 to 1/2 cup fresh almond milk
1/2 tsp vanilla bean, or vanilla extract
raw honey, or maple syrup to taste
Blend in Vitamix on high, pushing sides down with tamper until completely blended. This will likely only take 30 seconds or so to blend! Then simply enjoy.
