Easy 4th of July Picnic Dessert

Today, in honor of the most patriotic day of the year, July 4, I offer you a recipe for a nutritious and EASY dessert to accompany any picnic or barbecue!

 

Creme Filled Strawberries  -   read through recipe first!

1 carton strawberriestake_control_of_blood_sugar

1 carton of organic heavy cream

blueberries

Wash and hull strawberries, cutting ends so that they sit flat on plate.

Make a batch home made whipped creme using organic heavy whipping cream.

If you have never done it before, it’s easy! It’s best to use a bowl that has been chilled in the freezer for 30 min or so. To the bowl, add 1 carton of organic heavy whipping cream and sweetener, if using. It’s perfectly fine without sweetener, though!

Using an electric beater, beat on high until soft peaks form, which should take only a few minutes.

Fill strawberries with whipped cream and place 1 or 2 blueberries on top.

As I mentioned in my last blog, When Fruit is Not a Healthy Choice, summer is here and it’s time to enjoy all the delicious fruits that are in season - wisely, however! This recipe fits the bill for combining fruits with a good source of fat, namely the organic whipped cream. Ideally the cream would come from a local farm to make it the BEST quality cream. The fat slows down the absorption of the sugars in the fruit so that blood sugar levels don’t get spiked which would in turn cause a huge surge of insulin. High levels of insulin contribute to insulin resistance which paves the way for Type II diabetes.
